  • Chicken strips
  • Chicken broth
  • Chopped tomatoes

  • Cilantro
  • Low-fat sour cream
  • Wedges of lime

Preparation Method

Although chicken strips are used for this tortilla soup recipe, vegans or vegetarians can skip this option and use a vegetarian broth. Firstly, fry the onions and sliced jalapenos till golden brown. Next, add the cut tomatoes and cook till you get a mushy mixture. Once you get this consistency, add the chicken strips and fry till you get a golden brown color. Do not let the chicken become too soft and overcooked. Next, pour the chicken broth into this mixture. Now you can let the mixture boil till it cooks. Add water as you deem necessary. Add salt as necessary and chili powder if you would like a spicy soup. Once the mixture is entirely cooked, ladle the soup into bowls. Top the soup with the crumbled tortilla chips, jalapeno chips and cheese. You may also want to lime and sour cream to enhance the flavor. If you are vegetarian, you can skip the process of adding the chicken strips and use a vegetarian broth instead of chicken.
