An Easy Dinner Recipe for Students:
These recipes are great to taste and easy to cook and an all time favorite with college students. One such recipe is Cuban rice. Any person who can fry an egg or boil some water can easily cook this recipe. Though there are many versions to it, one suitable version for a student is as follows:
Recipe for Cuban rice:
- Tomato Sauce (Sofrito)
- 2 cups uncooked rice
- 4 eggs
- Olive oil
- 3-4 cups of water
- Salt to taste
Method: In a medium sized pan add 2 tablespoons of olive oil and allow it to stay till medium heat. Pour the rice into the pan and stir it to coat it with olive oil. Add water to the pan and bring it to boil. Add salt to taste. Reduce the heat and cover the pan loosely with a lid. Simmer for about 20 minutes or till the rice is done.
In another small frying pan, fry the eggs one at a time using olive oil. Sprinkle a dash of salt on them. Take a scoopful of cooked rice in a plate and add some Sofrito on it. Top it with a fried egg and serve immediately.

A dish of macaroni and cheese is an all time favorite with youngsters. It can be served at lunch or as a dinner menu. This easy to make meal is also available in frozen type and you can opt this as a recipe for dinner if you have access o a microwave oven.
